Our Pizza Day

My daughter has been asking when is her baking time again. Since she's so eager to bake, and okay we'll make it today. To make things easier, we decided to make pizza for dinner. "Yummy".. she said!

Here she goes, slowly and neatly folding the dough onto the tray....





...then decorate her own pizza with her favourite sausages and mushrooms...hee hee..;p



Oh and then what's she's doing? haha! We have decided to make something for dessert. Since we have some pizza dough left, here's what we did...........

Mashed the banana and add some honey into it......



Spread some melted cooking chocolate onto the pre-baked pizza dough, and then followed with the mashed banana! Sprinkle some shredded mozarella cheese and in the oven it goes.

Here is it..our Chocolate Banana Pizza for dessert!

The result is unbelievable....its super yummy! Trust me..its really delicious!!

Below is the classic style but actually its more to our own simple style then those pizza house..;p

This time I did saute some garlic with olive oil until fragnant before I add in the mushrooms. I like it that way....;)

Within 10 minutes, we finished the whole pizza! haha! Right after that we head for our "new" banana pizza...ooh, its good! My girl said she wants to make that Choc Banana pizza again very soon...haha!

Beautiful Colours

Testing..testing! I've been testing with some natural colours on my Angku Kueh. And guess what? I found the most beautiful red colour!! Yeah!!

With the same recipe but different ingredients.....YES! Beetroot it is! I'm so excited when the colour turns out beautifully...wonderful..:)


Perfect red from the Beetroot.....




Yellowish Sweet potatoes....





See what I mean....the natural RED from the beetroot.
All I used was...200g beetroot (cooked and blended), mix into the pastry ingredients. Then knead evenly. The colour is actually dark red-purple before steam.



Oh I just love the colour. What do you think?

And the same old ones (yellowish) with sweet potatotes. Couldn't find the purple sweet potatoes, or else I'll have 3 beautiful colours here...;p Oh I just love this kueh...;)

Simple Egg Rolls

What's for dinner today? Mmm....egg rolls, that's it! A recipe adapted from my grandmother. Haven't been eating this rolls for a long time. My grandmother is a good cook, and yes, she still is! But somehow with her old age now, she kinda need more rest than before. I can't remember when she taught me this but I do remember it taste good..:)

It's been a long time since I last made this...I think about 10 years ago..hee hee..;p
A very easy and pretty dish no matter it was eaten by its own or with steam rice....both "good"!


All you need is......


Marinate the minced pork (200g) and minced shrimps (50g) with 2-3 tsp sesame oil, 1 tsp sugar, 1 tsp cornflour, 3 tbsps light soy sauce and a dash of pepper.

Whisk 4 eggs and panfry it until set ( not over cook).

Spread a layer of mix meat onto the egg omelette and cover with a sheet of nori seaweed. Gently roll up the egg into a long roll and place on a plate for steaming.

Steam for 15 minutes and cool slightly before cutting.

It can be serve with or without the sauce.

Ingredients for the sauce,....

Panfry alittle garlic with a little oil until fragnant.

Add in 1 tsp rice vinegar, 2 tsps light soy sauce and alittle sugar to taste. Stir well.

Drizzle onto the rolls and serve.

Simple and delicious. We just love it..:) Yummy!

A Birthday Cake for her

A friend of mine tried my Chocolate Marble Cheese Cake last few weeks and said she loves it so much. And so she wants me to help bake this cake for her best friend's birthday today. I never thought of baking for bussiness but I do like the feed back of my friends about my bakings. Since she love it so much, and why not...:)



If you had read my previous post about this cake, you'll see the big difference..haha! YEAH!! I got it this time....with the clear marble effect..;p
Somehow there still have cracks on it..*sigh*..:( Is it my oven too hot? I did complain it to my husband, so maybe he'll get me a new one..haha!



She has requested to decorate with fresh orchids, but too bad I couldn't get one. So here is it...a daisy instead.

With just some icing flowers piped by the side, I think it looks better...hee hee..;p And so the cake is finally completed with decorations............

.............and nicely packed. Hope the birthday girl will like it..:)

Flaky Roasted Bacon Siew Baos

Hey my dear friends, I'm back! Yea...back to my kitchen. It has been a long break since my last bake. I'm quite tight up with work lately and my girl has been sick since last week. She has a slight flu at first then she has cough and sore throat...then fever! Gosh! Bad bad bad..:( When she's sick, I can't sleep, worrying day and night. When I got not enough rest, my body aches..*sigh*.
She has recovered from fever but still has the cough. Don't want her to take any more medicine cause it makes her restless. Guess drinking more fluids will help.

Okay, back to my kitchen at last. Longing to bake this last 2 weeks and finally I got the time. Got this from my collection of books but has changed the fillings inside.

Here's the ingredients for you...

Ingredients for Water Dough:

200g Plain flour
60g Shortening
2 tbsps Castor sugar
125ml Water

Ingredients for Oil Dough:

160g Plain flour
160g Shortening

Ingredients for filling:

300g Roasted bacon (it can be replaced with roasted chicken)
1 onion, chopped
alittle shallots, chopped
alittle green peas

Seasoning:
1 tbsp Oyster sauce
1 tbps Soy sauce
1 tbsp Thick soy sauce
1 tbsp Sugar
1 tbsp Cornflour
1/4 tsp pepper (optional)

** Alittle white sesame for decoration before bake.

Method:
~ Stir fry shallots and onion till frgnant then add in other ingredients and seasoning and stir well. Refrigerate for later use.
~ Knead water and oil dough separately. Roll out water dough with center thicker than the edges.
~ Wrap in oil dough. Let dough rest for 10 minutes.
~ Roll dough out with rolling pin and fold once. Turn dough around and roll it out one more time. Fold into 3 layers and let it rest for another 10 minutes.
~ Divide the dough into 18 portions. Flatten each portion and wrap in the filling.
~ Place on tray lined with parchment paper and brush egg wash on top.
~ Bake at 200'C for 30 minutes or until golden brown.



The result is superb! The flaky pastry with the juicy fillings...yummy! I did it...;p (Although the wrapping was out of shape here..haha!)

Its definetely a keeper for me. This time I'll have a cup of tea with it instead of coffee..haha!

Cheese Sticks Fun

I had a great day today. Morning had such a "BIG" breakfast with hubby then lunch with buddies and then "FUN" in the kitchen with my daughter in the evening..:) We ( my girl & me) had been thinking what to bake for today. It has been a long break since her last baking fun with me. Yea, she's been asking for it..;) Guess she has the interest in it and hopefully she is so that I can pass down all my collections to her..hee hee!

Alright since she wants to bake so much today, we found something easy and nice for her. Cheese sticks it is! I have this recipe kept for a long long time, think its more than 10 years. (Adapted from the magazine, Women's Weekly)





Look at all the shapes! All created by my girl..haha! (except the twisted ones). And she even packed some to share with her friends tomorrow in school...^-^

Oh the recipe, here is it...

Ingredients:
(Makes 20 sticks)

1 + 1/4 cup Plain flour
1/4 cup Self raising flour
1 tsp Salt
75g Butter, chopped
1 cup Grated cheddar cheese
1/2 cup Grated Parmesan cheese
1 egg yolk
2-3 tbsps Water ( may need more - add slowly)

Method:

~ Sift all flours and salt together into a large bowl.
~ Rub in butter. Stir in cheeses.
~ Make a well in the center and add in egg yolk.
~ Add in water slowly to form a soft dough.
~ Knead in a floured surface until smooth (about 5 minutes)
~ Wrap with cling form and refrigerate for 30 minutes.
~ Roll dough into desire shapes or just twist it and place on a tray lined with parchment paper.
~ Bake at 180'C for 10-15 minutes or until golden brown.
~ Cool completely before storing.




The exact amount of water you need depends on the quality of flour you use. I need about 3 tbsps today actually. The texture is good, and its so cheesy when baked....yum yum!

Chocolate Marble Cheese Cake

Do you like cheesecake? I love it...:) It has been my pleasure to make a cake for my dear friend, Bee Bee. She has come visit us again...YEAH!! We really miss her alot since she left last December. And I've lost a great baking companion since then...;p So glad that I can bake something for her today...:) Although the outlook is not what I expected (alittle overbaked on the top), but the inside still can be excepted. Hee hee...pai-seh larr!



We actually had an expensive dinner before we had our dessert. What I mean expensive is really over charged. Just imagine we spent almost RM200 at the restaurant just serving chicken rice and some normal dishes. The food, hmm....can be excepted but not the price.

Anyway, after the dinner we head to the nearest A&W to have our dessert. Yup! My cake...haha! Luckily nobody complain that we brought our own food to serve there. We did order some rootbeer and fries for the kids though...^-^ A very nice chat at a very nice place...:)



Here's the recipe for you....

(A)
120g crushed Digestive biscuits
120g melted butter


(B)
1 kg cream cheese
4 small eggs
1 lemon rind (grated)
70g plain flour
280g sugar
100 double cream (lightly whipped)
1 tbsp lemon juice
20g melted chocolate

Method:
~ Preheat the oven at 150'C with a tray of water.
~ Mix (A) together into a 9" round loose base pan which wrapped with aluminium foil outside. Keep aside.
~ Cream cheese and sugar together until light, slowly add in eggs.
~ Then add in lemon rind and juice and mix well.
~ Finally add in double cream and flour.
~ Spoon out 3-4 tbsps (or more) to mix with the melted chocolate.
~ Pour the plain cheese batter into the pan with (A) at the bottom. Then top with the chocolate cheese batter. Use a chopstick to make a marble effect.
~ Bake at 150'C for 2 hours over a tray of water.
~ When baked, chill and demould.





Chocolate with cheese, a lovely combination. Agree? And goes with a cup of coffee. haha! Yea, I actually ordered a cup just now...;p
